I find one Genre Tag to be limiting on certain kinds of music. Take the Housemartin's Excellent 'London 0 Hull 4' album which could be considered Rock, Pop interspersed with some Gospel music.
I will use the comment tag to cover additional genres and build my genre based playlists this way:
I am also a strong believer in using the Comments tag/field to hold keywords. I like to listen to mellower music of any particular genre, so for every song (no matter what genre it is) that is slower and quieter, I have put "(quieter)" in the comments field.

Rock-Alternative
Rock-Folk
Rock-Classic (which I then can subdivide using Year)
Rock-Easy (as in Easy Listening)
It's so much easier to do all this as you add your music than to go back and reevaluate your collection later. Collections can grow so quickly. I think it's very important to have a strategy before your collection gets to big.
